Chocolatelove Bloghop: Double Dark Chocolate Pb Cookies

Peanut butter and dark chocolate: match made in heaven.
I seriously cannot think of a better combo.
I was inspired to make a double dark chocolate PB cookie,
when making some lovely carepackages...
and this cookie recipe made itself to my oven 3 times in 3 weeks.
Of course, I added a vegan and gluten free touch.
 Trust me, once you make, 
the delicious aroma will be forever imprinted.  
This is my new go-to cookie recipe now. :)


Double Dark Chocolate PB Cookies
Adapted from Bakerella's Dark Chocolate Chip Comfort Cookie
1 cup Bob Red Mill's Gluten Free Flour mix
1/2 cup sweet rice flour
1/2 cup cocoa, sifted
3/4 tsp baking soda
1/2 tsp salt

1 cup brown sugar
1/2 cup white sugar
1/2 cup vegan butter, softened at room temp
1/2 cup peanut butter
2 tbsp golden flaxseed meal + 6 tbsp water (2 eggs)
1 tsp pure vanilla extract

1 cup dark chocolate chips*

Directions:
1. Mix the dry ingredients together. 
2. Mix the wet ingredients together.
3. Combine the dry and wet ingredients.
4. Carefully fold in the dark chocolate chips and peanut butter chips. 
5. Roll into small cookie dough balls. 
6. Place on a baking sheet covered in parchment paper.
7. Bake at 350 degrees for 10 minutes.

To note: add peanut butter chips (not vegan though) to the batter for extra peanut butter taste.

  42. Yummy! I have book marked it to make for later! :) Have you ever tried Better Batter GF flour? Love it better than Bob's. I feel like its smoother and has a better taste :) (betterbatter.org) I just found them about a month ago! :)

  60. I love dark chocolate most and this combination of the cookies sound really delicious. I need to keep this recipe and try. I don't make cookies often (I'm actually not much of a baker) but for something I really like I actually get excited to bake (eat!). Thanks for the recipe!
