My latest obsession: green peas :)
Lately I've been enjoying frozen peas as a easy snack
or throwing them into salads and mixed grain pilafs.
They seriously add such a delicate accent to every type of dish.
And green peas are also lighter than beans in terms of carbs,
and packed with some good protein,
so I've been indulging just a little here and there. Hehe.
I tossed some red quinoa, brown rice, wild rice & peas,
with some EVOO, kosher salt, and curry spice,
and it satiated me nicely.
Cold weather always makes me crave anything curry spiced. :)
Mixed Grain Curry Pilaf
1 cup quinoa, cooked
1/2 cup brown rice, cooked
1/2 cup wild rice, cooked
2/3 cup green peas
1 tsp curry powder
1 tsp extra virgin olive oil (EVOO)
1/4 tsp kosher salt
Directions:
1. On medium low heat, toss cooked quinoa, brown rice, wild rice, and green peas for a couple of minutes.
2. Add in EVOO and toss.
3. Then add in curry powder and kosher salt, and toss for 2-3 minutes.
4. Serve warm.
To note: Substitute in any spices that pleases your palate. I keep a pack of frozen brown rice, frozen wild rice, and frozen green peas in my freezer to save cooking time when I'm on the go. Quinoa cooks within 20 minutes, so I usually keep the grain in bulk in my refridge.

This looks so good, Junia! I love wild rice. I love quinoa. I love curry. Lots of my favorite things tossed together in this dish :) you're right about pea, I've seen pea protein powder. Besos!
ReplyDeleteps. I've been craving lentils. Bought french lentils weeks ago but haven't been able to make them yet. Oh and yesterday I found jicama at the chinese farmers market, had some jicama watercress seaweed wraps for lunch. I uploaded a pic on my FB page, check it out and please give me ideas for the 5 pounds of jicama I have here. hehe <3

ReplyDeleteLove pilaf, of any sort, though yet to try the mix grain version. I generally use dried green peas, I cook large batches and freeze it. It is slightly firmer than the regular frozen stuff but less sweeter.

This looks amazing and delicious curry is definitely one of my favorite things for cooler weather. What I crave lately is anything cheesy or saucy, so curry is perfect!

Re dry and fresh peas, I was wondering why they differ in terms of nutritional value. I think the reason is that dried peas are harvested from fully mature pods whereas fresh peas are probably picked much earlier. Its like lamb and mutton, oops, wrong example:) Its like baby spinach and old spinach:)
ReplyDeletei think its pretty crazy how dried peas (30 grams) have way more carbs than fresh peas (15 grams) for the same amount of serving, but i think you are right. its prolly at what time it is picked! thanks for the info!

I've always loved peas, and this dish looks so light and healthy with the gorgeous green peas. Have you tried cooking with pea flour yet? There's a recipe at Gluten Free GiGi that looks good for bread made with pea flour. Hip hip horray for peas!
