Kale Chips

With our New Year's resolutions,
we are all looking to find some healthy indulgences,
including myself. :)
Now that Christmas break is over,
I'm ready and focused
for my healthy eating plan this year.
My resolution - eat a balanced diet and workout.
Less carbs and sugar,
more protein and nutrients.
I feel my best when I eat this way!

When I'm in the mood for a quick salty snack,
I grab a handful of kale,
chop and toss with evoo and sea salt.
Roast and eat in 15 minutes.
Yes, it's healthy and that easy. :)

Kale Chips 
4 bunches of kale, destemmed
2-3 tsp of extra virgin olive oil
sea salt, to taste 

Directions:
1. Chop kale into bite size pieces, evenly cut. 
2. Toss 1/2 of chopped kale with 1tsp  evoo (or massage with hands). Do the same for the remaining half. 
3. Spread on a baking sheet, lined with parchment paper. Sprinkle sea salt.
4. Bake for 13-15 minutes at 375 degrees, or until crispy.

I can finally say that I'm on the path to healing from my digestive aches and pains.  God is so good to me.  He answers prayers. This year is going to be the best ever.  I just have that feeling. :)

  5. Happy New Year Junia! That is quite a healthy transition you went through - I enjoyed reading about it - I love the idea that mindfulness (prayer) was central in your recovery. Beautiful story. These kale chips look perfect - they are such a great treat (and, if you don't dump vinegar all over them like I once did ;0 - they also stay crispy!) - I'll be looking out for your goal of increased protein in 2012 ;) - my detox started today... :) Bliss to you - xo

  9. Junia-you are truly an inspiration for healthy indulgence. I wish I could convince a friend of mine to check out all the healthy and delicious vegan recipes...she has major gastro problems, and suddenly went "cold turkey" to her previous
    old fashioned "macro biotic" diet; don't know if you heard of that, mainly brown rice, nuts, and only cooked vegetables. No raw fruits, or raw veggies...in other words, no fresh salads!

    Love the kale chips, they look so healthy, and yummy!

  22. i bought a bunch of kale a while back - can't believe i didn't think about making chips! i've actually accidentally made brussel sprout chips once haha.. it was yummy! will have to purposefully get kale again!

  36. I make kale chips at least twice a week. They are devoured by the kids who can't get enough of the taste. Much healthier than regular old potato chips, so I'm a happy girl.
