December is the month of cookies and love. Le sigh. :)
So I made sunflower seed butter into a cookie with sprinkles.
Sunflower seed butter is one of my favorites out there.
Sunflower butter cookie? That is just bliss. :)
Since I am on a sugar cleanse for the time being,
it took a whole lot of will power not to eat these cookies.
My weakness: sugar (or starch) in any form and nut/seed butter. *blush*
Thankfully my lovely cousin, friends, and parents ate them up
and enjoyed them to every crumb.... for me. :)
Here's a "healthier" cookie recipe for you,
grain free, gluten free, butter free, and vegan.
the best part: it's so simple!
it can be universally adapted for any type of nut/seed butter you have,
or downsized to just one cookie serving. hehe.
Sunbutter Cookies (GF)
Adapted from a recipe found on Real Simple
1 16 ounce (2 cups) Sunbutter
1 1/2 cups white sugar
1/2 cup brown sugar, packed
2.5 tbsp golden flaxseed meal + 6 tbsp water
2 tsp pure vanilla extract
2 tsp baking soda
1/2 tsp kosher salt
Optional: Sugar Crystals for decor
Directions:
1. Combine flaxseed meal and water together and let it sit for 3 minutes.
2. Mix sunbutter and sugar together until well combined. Then add in flaxseed mixture and vanilla extract.
3. Add in baking soda and kosher salt. Mix well.
4. Chill dough for at least 30 minutes.
5. Create small balls of cookie batter (about 1 inch in diameter) and place on baking sheet lined with parchment paper. Roll in sprinkles (optional).
6. Bake at 350 degrees for 9-10 minutes.
7. Let it cool on the cookie pan for 2-3 minutes. Then remove with spatula on a cooling wrack.
Other tips: Important to let the cookies cool for a few minutes before taking them off, since they are super soft (no gluten or butter here). This will allow them to keep a nice shape before cooling them completely. :) Also, make sure that the nut/seed butters you use have enough natural oils in it. The bottom of the nut/seedbutter jar will not suffice since it is too dry. If you go thru jars of them like me, you will know what I mean. :)

ReplyDeleteGreat, you are quick off the mark.This sounds delicious. The recipe has hardly any carbs/flour or other fillers. Its pretty much just sunbutter and sugar - I see why they are difficult to resist.
