I am on a quinoa kick lately.
I was looking through my food pantry
and this delicious quinoa mess came about.

Fresh quinoa
drizzled with almond butter syrup,
with chunks of ripe strawberries,
and slivers of almonds,
this is my favorite quinoa mess yet.
Strawberry Almond Butter Quinoa
1/4 cup quinoa
1 cup water + 1/2 cup
2 tbsp of almond butter*
3 tsp of water*
3 strawberries, chopped
slivers of almonds
almond milk, optional
almond milk, optional
cinnamon, optional
Directions:
1. Cook quinoa with 1 cup water for 20 minutes or until well cooked. Add in 1/2 cup more water if you want the quinoa to be fluffier and cook until water is absorbed. Let it cool.
2. With almond butter, mix with 1 tsp of water using a small spoon. Continue to add tsp of water until liquidy or syrupy.
3. Top quinoa with almond butter syrup, strawberries and almonds. Add cinnamon if desired.
Other tips: Add more or less water depending on your almond butter, since every jar varies in texture. I used freshly roasted ground almond butter. Just almonds in mine, nothing more. :) Eat with almond milk as cereal if desired.

Ahhh so glad you are able to enjoy quinoa again :) yesterday I made a quinoa-cranberry-almond salad with parsley, white balsamic vinegar and olive oil for one of my clients. She loved it! will try this recipe for one of her meals this week.

ReplyDeleteI just ran out of almond butter the other day. This combination looks delightful though! I've tried something similar with oatmeal, but I bet quinoa would be even better. Strawberries are definitely one of my favorite fruits :] Oh and I'm liking seeing your daily eats very much. Keep them coming! :]
