I was peeling my carrots today
and I was inspired to make a shaved salad.
I normally steam all my veggies,
including my spinach leaves,
including my spinach leaves,
but today's meal was high raw,
minus the pinto beans and...
the steamed portabella mushroom (not pictured).
Another daily eats and clean eating post for ya :).
Raw Shaved Veggie Salad
handful of baby spinach leaves
4 stalks of asparagus
1 carrot, peeled
1 small beet, peeled
small knob of ginger
1/4 cup dry pinto beans, soaked overnight
1-2 cups of water
Directions:
1. Bring water and soaked pinto beans into a boil and let it simmer for at least 30-40 minutes. Add more water if needed. Turn off heat when beans are tender.
2. Shave carrots, asparagus, beets, and a few flakes of ginger.
3. Top the shaved veggies and cooked pinto beans on top of spinach.
4. Enjoy with your favorite dressing or eat solo.

Such a lovely fresh salad. Love the addition of the fresh ginger. I can totally find all the vegan recipes on your blog for sharing with our vegan neighbor friends...and for us to enjoy as well, even though we are not vegan, some members are vegetarian in my family, and we always have all three types of foods to choose from!

ReplyDeleteShaved veggie salad. I love peelers, unfortunately I don't have one here during my visits in Vienna. I wish I can have a cooking briefcase with me (carry-on), otherwise it would have been considered illegal (knifes, peelers, etc.)
