Cake Bloghop: Green Tea Cake with Coconut Icing

August is #cakelove month!
A way to end the summer with a bang :).
A present from me to you.
I call it "have your cake and eat it too" :).  
Vegan Green Tea Cake :)
I topped one batch with coconut butter
and the other with whipped coconut cream.
Great, healthy, simple-to-make options
for icing on your cake. 
hehe.
Coconut Butter
2 cups coconut flakes 

Directions: Blend coconut flakes in food processor using the S blade for 10-20 minutes scraping down the sides every couple of minutes! Puree until smooth. Store in room temperature.

Coconut Whipped Cream 
1 canned coconut milk, chilled
3 tbsp confectioners sugar
2 tbsp arrowroot starch
2 tsp vanilla extract

Directions: Blend coconut milk in food processor using the S blade until peaks form. Add in confectioners sugar slowly.  Add in arrowroot and vanilla extract and blend well.  Store in refrigerator.

Vegan Green Tea Cake
Adapted from Eat, Drink, & Be Vegan: All-Purpose Vanilla Cake

2 cups unbleached all-purpose flour
1 cup cane sugar
1 tbsp green tea powder 
1/2 tsp salt
2 1/2 tsp baking powder
1/2 tsp baking soda

1 1/2 cups original sweetened almond milk
1/4 cup expeller pressed canola oil 
3 tb unsweetened applesauce
1 tsp freshly squeezed lemon juice

1. Combine flour, sugar, green tea powder, salt, baking powder & baking soda.
2. Combine milk, oil, applesauce & lemon juice in a separate bowl.
3. Add the wet mixture to the dry ingredients and mix well.
4. Pour batter in a greased cupcake pan or use liners.
5. Bake at 350 degrees for 15 minutes for cupcakes, 23-35 minutes for cake, 40 minutes for bundt pan.
6. Frost to your delight or just eat it simply solo, my preference of course. :)

  4. Thank you! Thing is, I never took part in a bloghop. Resized photo to 90 square pixels..blurred and couldn't fix, and the bloghop script doesn't work in free wordpress. I'm a mess lol However, your green tea cake is NOT a mess, it's stunnig and looks delicious! Love green tea in baked goods!

  36. What a fun event and a lovely cake - nice combination of coconut and green tea. Wondering if you're using fresh coconut for the coconut butter. Also, I've tried whipping coconut milk but it doesn't seem to peak like yours or others I've seen. Obviously, I'm doing something wrong - any tips?

    since we dont have almond milk over here, what do you suggest i use, to get the closest possible flavopr like almond milk. or how can i prepare it myself..yay yay ,wanna try your recipe

  50. I think the green tea flavor is so refreshing that I even buy soap with green tea extract, lol. Using it in a cake is a great idea and I believe the coconut flavor will go great with it.
