Of course, I had to veganize the recipe...
and healthify it, just a little bit.
I attempted to make it gluten free too!

That's how I roll :).
Double Chocolate Chip Muffins (Gluten Free)
Adapted from Nigella Lawson's recipe on the Food Network
1 3/4 cup Gluten Free Flour Mix*
1 tsp xanthan gum
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp salt
2 tbsp unsweetened cocoa
3/4 cup cactus honey powder (or substitute with sugar of choice)
1 cup sweetened almond milk
1 tbsp fresh lemon juice (1/2 wedge)
1 tbsp golden flaxseed meal
3 tbsp water
1 tsp pure vanilla extract
1/3 cup canola oil
1/3 cup canola oil
1 cup dark chocolate baking squares/morsels
Directions:
1. Combine GF flour mix, xanthan gum, baking powder, baking soda, and salt, and mix well.
2. Sift cocoa powder and add to dry mixture.

3. Add in honey cactus powder to the dry mixture and mix well.
4. In a separate bowl, combine flaxseed meal with water. Let it sit for 3 minutes.
5. In another bowl, combine almond milk, lemon juice, vanilla extract, canola oil together.
6. Add in flaxseed mixture with wet mixture.
7. Combine the dry mixture and the wet mixture together.
8. Fold in the dark chocolate chips.
9. Pour batter into cupcake liners.
10. Bake at 400 degrees for 15-20 minutes or until the toothpick comes out clean.

1/4 cup tapioca starch
1/4 cup arrowroot starch
Other tips: Check your label on your dark chocolate. Not all are vegan. :)

Chocolate alone is amazing but double must be totally incredible! These look delicious!
