I love brownies.
Ever since I was in high school,
I've been obsessed.
I still remember buying a brownie at every school bakesale.
Yeap, that was moi. :)
I was inspired by a nutella brownie post,
and I knew I had to make a vegan version.
Even I have some indulgences here and there :).
Chocolate Hazelnut Butter Brownie Bites
Inspired by Abby's Nutella brownies
6 tbsp hazelnut flour*
1 tbsp flaxseed meal
3 tbsp water
1 tsp non-dairy milk (almond or cashew)*
1 tsp baking powder
1/8 tsp salt
1 tsp non-dairy milk (almond or cashew)*
1 tsp baking powder
1/8 tsp salt
1/8 cup vegan chocolate chips
Directions:
1. Combine flaxseed meal and water together. Let it sit for 3 minutes.
2. Mix flour, baking powder, chocolate hazelnut butter, flax seed mixture, non-dairy milk together until smooth.
3. Fill batter in a mini-muffin pan with cupcake liners. Fits about 12 mini cupcakes.
4. Top with chocolate chips.
5. Bake at 350 degrees for 12 minutes.
6. Enjoy your brownie bite with a glass of almond milk. :)
*Other tips: Nutella normally has milk added to it, so it is creamier than Justin's vegan hazelnut butter. I added non-dairy milk to make the batter smoother :). Add more if needed depending on your brand of chocolate hazelnut butter. Also, feel free to use any type of nutflour (almond, chestnut, etc) to get the texture that you are looking for! Add more nut flour if needed. I used the food processor to make my hazelnut flour! :)
