Chickpea Lettuce Tacos

Looking for a way to healthify your love for tacos? :)
Bienvenidos a la familia - los tacos de lechuga :) 
Chickpeas with cilantro, onion, garlic
with a touch of cumin, paprika, black pepper, and kosher salt,
with a squeeze of fresh lime juice,
wrapped in a romaine heart lettuce leaf...
paired with the classic pico de gallo and guacamole,
here are some healthy vegan tacos for ya.


Chickpea Lettuce Tacos
2 cups (16 ounces) chickpeas
handful of cilantro
1/4 Spanish onion
2 tsp of minced garlic
1/2 wedge fresh lime
1/2 tsp cumin 
kosher salt + black pepper (to taste)
paprika or cayenne pepper (optional) 

one head of romaine heart lettuce leaves  

Directions:
1. In your food processor, finely chop cilantro and purple onion.  Put into a mixing bowl. 
2. Coarsely chop chickpeas into the food processor. Do not blend! Press the "pulse" button several times until you get the desired consistency. 
3. Mix chickpeas, cilantro and onion together. Add in garlic, lime, and cumin.
4. Add salt and pepper to taste.  Add paprika for a mild, smokey flavor or cayenne pepper for a spicy palate.  
5. Serve chickpea tacos on a romaine heart lettuce leaf with fresh pico de gallo and guacamole. 

Yay for healthy eating. :)

  2. ok so that lettuce leaf, looks like a bowl. I was like...oooohhh, pretty lettuce bowl! bahaha! Love this, althought I can only do chickpeas when they are ground like hummus! :) But it looks lovely dear!

  5. Looks yummy! You should post all in spanish some times, so I can practice my reading- its such a beautiful language and food seems to always sound better in Spanish or Italian, I think!
