Nut & Seed Butter Bites
A great way to start the new year - healthy snacking :).
A Perfect Balance: good fat + protein + potassium + fiber + natural sweetness.
Almond Butter Bread Bites
1/4 cup natural almond butter
1/2 ripened banana
2 Tb unsweetened applesauce
1/4 tsp baking powder
Sunbutter Bread Bites
1/4 cup natural Sunbutter seed butter
1/2 ripened banana
2 Tb unsweetened applesauce
1/4 tsp baking powder
Directions:
1. Blend 1 banana in a food processor and divide into two bowls.
2. Stir in Sunbutter and applesauce in one bowl, almond butter and applesauce in another.
3. Add in baking powder to each batter and mix well.
4. In a greased mini-muffin pan (I used expeller pressed coconut oil), add 1 tsp chunks into 16 minis.
5. Bake for 15 minutes at 350 degrees. Use a toothpick to check that it comes out clean.
Other tips:
*Use natural smooth nut/seed butter in a jar. And add some sea salt before baking on top for extra flavor. :) For this recipe, I recommend the Maranatha almond butter for its extra smooth texture or the Sunbutter for its sweet flavor!

Elizabeth - I couldn't find them at the store! Just saw them online from the link you sent me. I would love to try it one day! I got the natural one with sugar/salt (that's what they had at whole foods) and it was very different but from the maranatha, but i loved it! i like the sweet taste of it. happy new year!

ReplyDeleteamy - i think the nuts/seeds give the flour texture (since almond flour for example can be used to replace normal flour for some recipes!). i wasn't expecting it to look like a muffin either!

ReplyDeleteI made this and unfortunately realized I had baking soda, not baking powder at home. I used a baking soda substitution. It took longer in my oven (about 25 minutes). The crust was nice but it was still a little gooey on the inside.

ahhhh baking soda and baking powder work differently actually! baking soda needs a bit of lemon juice to get it working... baking powder only needs the banana to be activated (if that makes sense).
ReplyDeletemine weren't gooey inside, but the almond butter bites were definitely denser. the sunbutter ones were much much lighter, fluffy, bready.
