I seriously love avocados.
You've seen them making periodic cameo appearances on my blog,
because I get these incredible cravings for them once in awhile. :)
I had a whim for a creamy avocado dip
and decided to add some protein
to make it satiating and nutritionally balanced.
This veggie dip is heaven for lovers of raw foods like me,
but it will please even your picky veggie eater
who needs to eat dip with every bite of green! :)
Creamy Avocado Cashew Dip
1/2 of a ripe avocado
1/3 cup cashews
1 tbsp original sweetened almond milk
1/4 freshly squeezed lemon juice
1. Soak cashews for 1 hour.
2. Discard water and blend cashews in food processor until finely ground. Scrape down the sides of the batter bowl occasionally!
3. Add the avocado and blend until well combined in the food processor.
4. Add almond milk and lemon juice and blend in the food processor. Add more lemon juice to taste if needed.
5. Enjoy with freshly cut veggies or veggie crackers. :)
