Asian Pear Cinnamon Cake

Asian Pear Cinnamon Cake :*).
Pretty pear core. :) I love flowers.

The sweetness of the asian pear compliment this bread so well. Love it!
Oh my, this is scrumptious. Absolutely a must-try. 

Asian Pear Cinnamon Cake 
2 cups all purpose flour
3/4 cup white sugar
2 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp ground cinnamon
1 tsp sea salt

1 cup sweetened original Almond milk
1 tbsp freshly squeezed lemon juice
1/4 cup canola oil 
2.5 tbsp golden flaxseed meal
6 tbsp water

1 cup freshly grated asian pear
1/2 cup chunks of asian pear

garnish - asian pear core
sprinkle of sugar + cinnamon

Directions
1.   Cut the asian pear in half horizontally. 
2.   Grate one half of the pear using a mandolin with sharp ridges. Squeeze excess juice out with hands.
3.   With the other half, chop into small chunks and reserve the core for garnish.
4.   Combine the dry ingredients together in a bowl.
5.   Combine flaxseed meal + water in a separate bowl and let it sit for 3 minutes.
6.   Combine almond milk, oil, and lemon juice in a separate bowl.  Add flaxseed meal mixture.
7.   Add the wet mixture to the dry mixture and mix gently. Don't overbeat the batter!
8.   Fold in grated + chunks of asian pear gently. Do not overmix.
9.   In a greased loaf pan, lined with parchment paper, pour in the batter.
10. Sprinkle lightly with sugar + cinnamon.  Add pear core garnish if you please. :)
11. Bake at 350 degrees for 60-65 minutes or until golden brown.

Other tips: The toothpick might come out a little sticky, but that's okay! It is probably the pear chunks that have caramelized in the baking process. :)

Oh yes, this is vegan. :) For omnivores, substitute flaxseed meal + water with 2 eggs.

    kinda funny that a lot of older taiwanese people (my parents' friends) refer to it as a 'korean pear'.
    and i love the core garnish. so much beauty in nature!

  4. hahaha i grew up calling it the korean pear too! but i saw it labeled as asian pear at whole foods...! hahaha. i know, so much beauty in nature - agreed. i'm going to try an apple garnish one day for something else!
